Amaranthus - Love-Lies-Bleeding

All varieties of amaranth have high protein edible seeds, and the young leaves and shoots can be eaten like spinach. Love-Lies-Bleeding or Chenille Plant makes a good display: green foliage contrasting with bright red seed heads that hang down to the ground like ropes. The seeds are pink.
